I am writing this book, which I have titled HEALTHY EATING, YOUR FIRST MEDICINE, emulating the great Hippocrates, who was very right 2,500 years ago when he told his patients that the first medicine they should consume to maintain well-being and preserve or recover health was their own food, since this great observer of nature was clear and sure that health and illness were closely linked to what we eat every day. My goal is to give you or share with you, dear reader, the experience I have lived through over 40 years of professional practice, through which I have harvested the truths that relate nutrition with health and present those truths to you in two parts. In the First Part I will address the influence of culture on our eating habits to understand the conceptualization that diet receives in different sectors of the world and the importance they give it in its relationship with health and illness. In Part Two I will enter the world of Dietetics and Diet Therapy to explain the different diets that many people follow on the recommendation of their nutritionists and that are aimed at achieving specific health objectives. Finally, I have left for my Epilogue some advice to take on the longed-for CHANGE that we all must take on in terms of nutrition, when it comes to improving health
